Dairy Distillery is located in beautiful Lanark County, the maple syrup capital of Ontario home to over 90 maple syrup producers. For generations, sap has been collected from the maple trees of Lanark County. The sap flows for only a couple weeks a year and must be boiled into syrup within hours before it spoils. Maple sap is mostly water containing only 2% sugar. Traditionally, the sugar is concentrated by boiling off the water using a gas or wood fired evaporator. To reduce energy costs, the sugar in maple sap is concentrated to 10% using a reverse osmosis (RO) filter. Using an RO filter significantly cuts the carbon footprint of making maple syrup. Innovation that’s good for the planet and the bottom line.
Being in the heart of Lanark County, we look for innovative ways to use maple products. Our first effort was our Vodkow maple cream liquor that blends pure maple syrup with Canada’s only lactose-free cream liquor. This year, we’re releasing the world’s only maple sap liqueur. This seasonal product can only be made in the two short weeks maple sap is flowing. We blend our Vodkow vodka with concentrated maple sap to produce a 17% alcohol by volume liqueur. The liquid is clear with a slight maple hue. Not overly sweet, the liqueur has a distinct maple flavour. Enjoy it on ice or to add a touch of maple sweetness to cocktails.
